2 種を大学で開発し、披露報告会で試食とアンケートを行った。弁当は食事バランスガイドの目標量、健康な食事(スマートミール)の基準(エネルギー量、エネルギー産生栄養素バランス、食塩相当量、副菜量)に合致し、栄養学的価値が高いことが立証された。日常食す弁当より薄味とされた一方で、とても美味しい(69.2%)と評価された。食育に繋がる弁当として事業化が望まれ、大学主催のシンポジウム(MICE)からも要望があった。地場産新鮮食材の味・香り、食感を生す献立開発により、低塩で副菜量が多くても美味しく、人々の減塩や野菜増加を導く健康な食事として、MICE
